Ordering Chinese take out can be easy but sometimes I love to make my own chicken fried rice at home. It’s another one of my favorite go to dinners that the whole family loves!
There are many variations to this recipe. I make it as chicken fried rice but you could make pork, veggie or shrimp fried rice by using whichever protein you prefer. 🙂
2 Chicken breasts, boneless skinless, diced and sauteed in sesame oil for 3 – 4 minutes each side.
6 cups of cooked Basmati rice – you want a firmer rice so cook according to package using less water. You could also make a day or two ahead of time.
1/2 Vidalia onion diced and sauteed
1/2 bag Stir Fried Vegetables. I like Trader Joe’s – Hodgepodge 8 Vegetable Blend. Saute a few minutes to heat through
2 Eggs scrambled
2 Tbsp Sesame oil/Peanut oil
2 – 3 Tbsp low sodium soy sauce
Fresh ground pepper and himalayan pink sea salt to taste
I use a ceramic non stick wok similar to this one TeChef – 12″ Wok / Stir-Fry Pan, (PFOA Free). Heat sesame or peanut oil in the wok. If you like use a little of both oils. Put the cooked rice into the heated wok and add the soy sauce. Stir frequently. Once heated mix in onion, veggie mix, scrambled eggs and chicken (or your choice of protein). If needed add more soy to taste and salt and pepper. Heat through and serve.
